Mastan Mutton Biryani

Hi all,

Happy Sunday !! Sunday reminds of Biryani... Biryani is always special. I guess its all time favorite for all.there are too many varieties of biryani. This Biryani is indeed very tasty and simple too.. The original recipe is from Chef Jacob. I loved the recipe and tried . You also can try it.

Ingredients:


  • Mutton - 500 gms
  • Basmathi rice - 2 cups
  • Bay leaf - 2
  • Ramba leaves - 2
  • Cinnamon - 1"
  • Elachi - 4
  • Cloves - 4
  • Tomato - 1
  • Ginger garlic paste - 1 1/2 tsp
  • Green chilly - 7
  • Maratti moggu - 2-3
  • Mint leaves - 1 cup
  • Coriander leaves- 1 cup
  • Ghee - 4 tbsp
  • Salt



 Method:

  • Heat ghee in a pressure cooker. Add all the spices.Add whole green chillies ( dont chopped or cut it.).
  • Add ginger garlic paste.Add the Mutton to it and fry well.Fry till it turns pink.
  • Add ramba leaves and salt.
  • Add chopped mint leaves and coriander leaves.
  • Add little water for the mutton to boil.
  • After the mutton is boiled , add the soaked rice.
  • Add remaining water required for rice.
  • Add the chopped tomato.
  • Add the remaining salt.Allow it to cook for 3 whistles.
Yummy Biryani ready.


Verdict from my hubby: Authentic biryani and tastes too good.

Masala Milk - a remedy for cold / Infected throat

 

 Masala milk is my alltime favorite.But this is not the regular masala milk. Its a remedy for cold and infected throat.


Ingredients:


  • Milk - 2 cups boiled
  • Ginger - 1 small piece
  • Pepper corns - 2-3
  • Turmeric powder - 1/2 tsp
  • Sugar - 1 tsp


 Method:

  • Boil the milk, add turmeric powder, peppercorns.
  • Smash the ginger and add it the boiling milk.
  • Allow it to boil for few mins.
  • Filter it and add sugar.
  • Serve hot.



Relieves the throat and a wonderful drink too.

Gobhi Paratha / Cauliflower Paratha


  Gobhi paratha is a type of paratha that is stuffed with flavored cauliflower and vegetables. It is a bread with North Indian origin, and is predominantly popular in South Asia. - Wikipedia

Nutritional facts of Cauliflower:


  • Packed with rich nutrients, cauliflower or cabbage flower is one of the commonly used flower-vegetable. The flower heads contain numerous health benefiting phtyo-nutrients such as indole-3-carbinol, sulforaphane etc., that help prevent prostate, ovarian and cervical cancers.
  • Botanically, it is a member of the cruciferous or brassicaceae family. It has got a similar nutritional and phyto-chemistry profile with broccoli and cabbage.
  • Like broccoli, cauliflower too is made up of tightly clustered florets that are begun to form but stopped at bud stage. This cool-season vegetable prefers fertile rich adequate moisture in the soil to flourish.
  • To keep the flower heads creamy white, they should be protected from sunlight. This is done by tying the close-by leaves together over the heads when the heads are the size of a quarter. Over-maturity makes the heads get loose and grainy surfaced, and lose much of their flavor and tenderness.



 Ingredients:

For Chapathi:
  • Wheat flour - 1 cup
  • Water
  • Salt
  • Oil - 1 tbsp
For stuffing:

  • Cauliflower - 1 cup grated
  • Green chilly- 2 chopped
  • Coriander leaves - one handful chopped
  • Cumin seeds - 2 tsp
  • Salt



Method:

  • Knead the chapathi ingredients into a soft dough and keep it aside for 30 mins.
  • Mix all the stuffing ingredients.
  • Take small balls from the dough and slightly press it.
  • As cauliflower leaves a lot of water. Squeeze the water away and take the stuffing separately.
  • Add in the stuffing inside and close it like dumpling.Dust the stuffed balls and make chapathies. Do not spread it too much. As it would break up.
  • Heat tava, make the chapathies using little oil.

Chicken Lolipop


Chicken lolipop , the word itself tempts so much. Howwould it be to have a bite of it??? Come relish and enjoy the taste of it. Perfect starter. Me and hubby thoroughly enjoyed it. Simple but yummy treat. The original recipe is from Vah chef.


Ingredients:



  • Chicken drummette / Chicken Wings - Converted into lolipops - 5 pieces
    Corn flour - 1 tsp
  • Egg white - 1
  • Salt
  • Red chilly powder - 1 tsp
  • Chilli garlic paste - 1 tbsp
  • Soya sauce - 1 tsp
  • Oil - to fry 
  • Bread crumbs




 Method:


  • Wash the chicken loloipops and keep it ready. Add little chilly garlic sauce and soya sauce to the chicken and mix it twice. Add little salt to it.
  • Mix egg white, corn flour, chilly powder and little salt.
  • Heat oil in a pan, dip the marinated chicken in the egg mixture, apply it on bread crumbs and fry it.
  • It tasted really crisp and crunchy.

Peas Paratha


Peas paratha is all time favorite .. Its very healthy too . It gives the essential proteins and fibre .

Ingredients:

For Chapathi:
  • Wheat flour - 1 cup
  • Water
  • Salt
  • Oil - 1 tbsp
For stuffing:


  • Peas - soaked, boiled and smashed - 1 cup
  • Garam masala - 1 tsp 
  • Salt

Method:


  • Knead the chapathi ingredients into a soft dough and keep it aside for 30 mins.
  • Mix all the stuffing ingredients.
  • Take small balls from the dough and slightly press it.
  • Add in the stuffing inside and close it like dumpling.Dust the stuffed balls and make chapathies. Do not spread it too much. As it would break up.
  • Heat tava, make the chapathies using little oil. 


Enjoy the nutritious Paratha with Raitha or any side dish of your choice !!

Back to blogging after the celebations !

Hi all,

Missed blogging though.. But I have been really busy in celebrating my baby's 2nd birthday and our third anniversary. We celebrated by going for a small holiday. So I could not prepare anything at home. For my baby's birthday, I made sweet. I do not own an oven so could not bake anything.

So I just made Bombay Karachi Halwa . Recipe from Vah Chef and Fried gram Ladoo..Recipe of both coming soon...

Schezwan Egg Roast

Today's recipe is:

I saw this recipe done by Chef. Damodharan.. Watched the show on TV. Found it simple and interesting. So, I tried the recipe. It came out really well.Do try it out!

Ingredients:

For marination and fry:

  • Egg boiled -3 Sliced into quarter
  • Corn flour - 2 tbsp
  • Maida - 2 tbsp
  • Soya sauce - 2 tsp
  • Salt
  • Red chilly paste - 1 tsp
  • Ajinomotto


For the sauce:

  • Onion - 1 finely chopped
  • Soya sauce - 2 tbsp
  • Ajinomotto
  • Salt
  • Pepper powder
  • Red chilli paste - 1/2 tsp
  • Sugar - 1/2 tsp
  • water


Method:

  • Mix all the ingredients " for marination" ingredients together.
  • Heat oil in a pan, fry the eggs that are marinated.Keep it aside.


For sauce:

  • Heat little oil in a pan.add the onions. Fry them.
  • Add salt, sugar, red chilli paste and saute them.
  • Add the pepper powder and soya sauce.Mix them well.
  • Add water and allow the sauce to noil for few mins.
  • Finally add the fried eggs.
  • Mix well and serve.

5 Whites ladoo




This Ladoo has a story behind it.. This was an instant ladoo made to stop my craving for ladoo. There are two people behind the craving for my ladoo. One is Priya Ranjit and the other one is Divya Pramil. They posted their coconut ladoo and besan ladoo. When I saw that , my craving started... So Jus tried out this Ladoo..Thanks to both of you...




Ingredients:

  • 1st White - Rava / Sooji - 1 cup
  • 2nd white - Sugar - 1 cup
  • 3rd white - Coconut - 1/2 cup
  • 4th White - Milk - 1 tbsp
  • 5th white - Cashew - few
  • butter melted - 2 tbsp




Method:

  • Grind rava and sugar together.
  • Melt a tsp of butter and fry the cashew and add to it.
  • Add the cardamom powder.
  • Melt another tsp of butter and fry the coconut and add to it.
  • Add milk to the mixture and make ladoos.


This feast is for my grandma, who has been a great guru for me in cooking....
