Broccoli Kofta Curry


A very tasty and healthy side dish for chapathi/rotis/ naans.. Since I wanted to introduce brocoli to my family, i wanted to try a different one and the taste does not spoil. Broccoli do have a peculiar taste. A must try side dish, I adapted a recipe from Sonys kitchen. Thanks for her recipe. Loved it.




Ingredients for the kofta balls:



  • Broccoli florets -1 cup
  • Carrot - 1 
  • Potatoes - 1
  • Ginger garlic paste - 1/2 tsp
  • Garam masala- 1/2 tsp
  • Corn flour - according to the binding 
  • Salt
  • Oil



Ingredient for the gravy :


  • Onion - 2 
  • Tomato - 1
  • Cumin seeds - 1/2 tsp
  • Garlic ginger paste - 1/2 tsp
  • Garam masala - 1/4 tsp
  • Turmeric - 1/2 tsp
  • Red chili powder -1 tsp
  • Coriander leaves - garnishing
  • Salt
  • Milk - 1/2 cup



Method:


  • Wash the broccoli florets and dry it nicely. Grind it coarsely along with grated carrot.
  • Heat a pan and fry the ground broccoli and keep it aside.
  • Boil the potatoes and smash it nicely. Add the broccoli carrot mixture and all the kofta balls ingredients together and knead it into a soft dough.
  • Make small balls out of it. Heat oil in a pan, shallow fry the balls and keep it aside.
  • Grind onions, ginger garlic paste, tomato,chilly powder and turmeric powder.
  • Heat oil in a pan, add cumin seeds.
  • Add the ground paste and salt and fry it till oil separates.
  • Finally add the required water and milk and allow it to boil.
  • Lastly, add the fried koftas and cook it for 2 mins.




Finally garnish it with coriander leaves and cream.

Javvarisi Vadam / Sabudhana Papad - Air fried


Got an air fryer from my hubby as gift. Slowly trying to make dishes in that without oil. Jus gave a try of instant javvarisi vadam. Its easy to make without oil. It tasted good .



Ingredients:



  • Javvarisi Vadam - 10-15 (store bought)



Method:



  • Switch on the air fryer, preheat in 180 degrees Celsius for about 5 mins.
  • After the timer is off ,open the tray and place the vathals in the tray. You can place as many as you want.
  • Turn on the temperature to 180 deg and the timer for 5 mins.
  • Open and see if its fried, else keep it for another mins.( for me its done in 5 mins).

Fish Dum Biryani/ Fish Biryani


Back with a bang, Long time since i tried a different biryani recipe. I wanted to make fish biryani for the  past two years, Just got chance n guts ti try it, The procedure is little lengthy. Worth a try. Biryani itself is a yummy dish, made it little healthy with fish.




Ingredients:

For marination:

  • Fish slices -  5-6
  • Lemon juice - 1
  • Turmeric powder
  • Chilly powder - 5 tsp
  • Salt to taste


Method:
  • Mix all the above ingredients for an hour.
  • Heat oil in a pan, Shallow fry the fishes and keep it aside.




For Rice :
  • Basmathi Rice - 2 cups ( Soaked for 20 mins)
  • Water - 4 cups
  • Oil - 1 tbsp
  • Salt - as required (for Rice alone)
  • Cardamom pods - 2 
  • Bay leaf - 1
  •  
Method:

  • Cook the rice till it is 85 % done. Drain it and keep it aside.





For gravy:

  • For Gravy:
    • Fish fried oil 
    • Cloves - 3-4
    • Cinnamon - 2
    • Cardamom - 2-3
    • Bay leaf - 2
    • Green chilly - 2
    • Onions - 2
    • Tomatoes - 2
    • Chilly powder - 1 tsp
    • Coriander powder - 2 tsp
    • Salt - only for the gravy
    • Curd - 1/2 cup
    • Water - little
    • Ginger garlic paste - 2 tsp
    • Coriander leaves

Method:

  • Heat oil in a pan, Add the onions and fry them for 15 mnins till it becomes dark brown for garnish.
  • Take the fried onions and keep it aside.
  • Heat oil in a heavy bottomed vessel. Add all the spices one by one.
  • Add green chilly and onions. Fry them well.
  • Add ginger garlic paste.Cook till raw smell disappears.
  • Add tomatoes.cook well.
  • Add Chilly powder, coriander powder and salt.
  • Add curd, mint leaves and coriander leaves and allow it to boil. 
  • To the fried fish, add little gravy and keep the remaining gravy.
  • Switch it on when the mixture is done.
  • In a pressure cooker, add the masala in the bottom, add little rice at the top of it. 

  • Add the fish masala on top of it.
  • Add the remaining rice on top of it and spread .
  • Sprinkle and garnish with the fried onions , coriander leaves and cashews.( below Picture)


Stir it from below before serving.

Coriander Spinach Thogayal / dhaniya palak Chutney



Generally we make thogayal with coriander or mint leaves. One of friend aunty used to make chutneys or thogayals using some greens to it.. What a fantastic idea to add greens to the chutney. The taste does not vary.. A good way to add greens so that it can be added to lots of dishes as side dish.

I simply added spinach to the regular coriander thogayal. The taste did not change though.. Loved it.



Ingredients:

  • Coriander leaves - 1 bundle
  • Spinach - 1 cup
  • Urad dal - 5 tbsp
  • Red chilly - 3
  • Tamarind - very little
  • Oil - 1 tsp
  • Salt



Method:
  • Heat a tsp of oil in a pan, roast Urad dal, red chilly and tamarind. Allow it to cool down.
  • Saute the spinach and coriander leaves for few mins  and grind it coarsely along with the remaining ingredients.
  • Add salt and mix well.

This chutney is suitable for rice, roti, Dosa and even as spreads for bread..

Homemade bajji bonda pakoda mix / homemade fritters mix



Wishing all my blogger friends a very happy tamil new year! 

Ever since I found bajji bonda mix in market. I wanted to make some and store in my kitchen. The store bought mix may contain soda and preservatives. We can avoid soda at home, but in some houses they still add soda. I do not like the taste of it, neither it is good for health. 

Simple to make and store in a container. For longer shelf life, refrigerate it.



Ingredients:



  • Besan flour - 1 cup or 3 tbsp
  • Rice flour - 1 tbsp
  • Chilly powder - 1 tsp
  • Salt required
  • Asafoedita - 1/4 tsp




Method :


  • In a bowl take all the above ingredients by measurement and mix well.
  • Transfer it into a container and store. 
  • Anytime, u can take it and make bajji, bonda or pakoda as per your wish!
  • You can also make murukku out of it.

Strawberry Malai Kulfi



Summer is here! what else, common begin the beat the heat recipes.... for a long time, i wanted to buy a kufi mould.. I just bought it recently. I went for a try.. My hubby and kiddo enjoyed.. After a long time blogging from singapore.. I know the summer here is miserable.. Watch this space for more summer cooling dishes!




Serving portions - 6 kulfies




Ingredients:



  • Strawberry - 100 gms chopped finely
  • Milk - 1 litre
  • Condensed milk - 1 cup






Method:



  • Wash the fresh strawberries and chop it finely.




  • In a heavy bottomed vessel, add the milk and boil it. 
  • Keep stirring it in a gap of 2-3 mins. Make it 1/3rd.




  • Allow it to cool, till it comes to room temperature.
  • Add the chopped starwberries and condensed milk.
  • Stir well. Pour the mixture in the moulds and freeze it for 8- 10 hrs.


 

 Enjoy and relish it in this hot summer!
